Ratio: 20g : 300g water

Water: Filtered Water treated with Medium Roast Water Profile (From Third Wave)

Notes: The coffee starts with a lovely floral aroma with moderate sweetness. As you taste, you definitely get a mild acidity (which increases to moderate as the coffee warms). On the palate, its a light sweetness with nuttiness and definite notes of honey. The nuts and roasty flavors pleasantly linger after every sip. I have not yet done any experiments with this coffee, but I need to try different grind sizes and the light roast water (to match the roasters profile, although my tests so far haven’t shown much of a correlation between what the roaster says, and which water profile ends up tasting better).
