Notes: Co-ferments can sometimes be the Milkshake IPA’s of the coffee world to me (it can be interesting, but can easily be overhyped and overdone). This on the other hand, was a delicate melody. The aroma is aggressively strawberries, freshly squeezed and bright. There’s a minor undertone of roasted brown notes, a mild hint of smoke. The coffee itself has a mild acidity that grows to moderate as the cup cools. It’s packed with fruitiness and chocolate, that fades gently into a mild bitterness. This is my first cup, but I’m curious to see how this coffee develops. I generally wait a few weeks for more experimental roasts, but figured trying one now and comparing down the line would be interesting (and I mean, who can wait when new coffee arrives).
