Ratio: 20g : 300g water
Water: Filtered Water treated with Medium Roast Water Profile (From Third Wave)
Notes: Did experiments with grind size and water (trying both light and medium roast water), and I found it best at a medium roast water profile with a grind setting at 3.33.
Sample A (Light Roast Water): Roasty aroma, upfront moderate acidity in the mouth, with some nuttiness. The hint of a berry sweetness is there, but hard to pick out. The mouthfeel is quite clean. This time I do detect a bit of the smokyness towards the finish.
Sample B (Medium Roast Water): Roasty aroma. At my first sip, the coffee tastes demonstrably different. There's a complexity to it that's hard to draw out, in addition to the acidity, there's a mix of bitterness and fruity sweetness (bit hard to pick out) that hits your palate. The finish is similarly clean, but I don't pick out the smokiness, it perhaps comes closer to a cacao / nuttiness than a smoky notes, but that could just be me trying to define what the mix of a light bitterness and roasted notes in the finish most remind me of. Pretty subtle.
