Notes on 1/31: I also tasted this coffee from Thankfully a little earlier than recommended to see how it develops. On the nose, I’m getting a strong breadiness, raisins, dates. Upon tasting, you instantly get a vibrant acidity that matches the lemonade / cranberry notes. There’s something to this taste that is a combination of florality, acidity, and light roast that combine super well to make a delicious cup. I’ve tried this at grind 2 and 3 but could not pick out much of a difference, I enjoyed both a lot. Very faint bitterness in the finish, the acidity sticks with you more than anything. As it cools, the acidity grows from moderate to high, which may or may not be to everyone’s liking but I quite enjoyed it.
