Fermentation Process: Advanced Washed Process (This is a really wild process, see the comments in this thread from PERC). Edinson dries the beans, then rehydrates them, then ferments them for 120 hours, then dries them again. This is not a co-ferment.

Water: Filtered Water treated with Medium Roast Water Profile (From Third Wave)
Notes: Fruity with a floral backdrop, some sweetness with a little acidity, jammy, its a blueberry pie that hits your nose with a breathtaking aggressiveness. When you take a sip, you transition quickly from the fruity notes towards more roasted sweetness. I get some cereal / breadiness with some molasses. This is spectacular. The finish is elegant, mildly roasted notes, very mild sweetness.
