Sous Vide Egg Bites

My sister was raving about the egg bites from Starbucks so I took a crack at remaking them. Plenty of recipes online, I went with the always reliable SeriousEats recipe, with some minor modifications (butter!), based on the ingredients listed. My wife confirmed these were “basically identical”.

Ingredients

Ingredients (to blend):

  • 5 eggs

  • 1/2 cup small-curd cottage cheese

  • 1oz Gruyere cheese, grated

  • 1oz Monterrey Jack cheese, grated

  • 1 1/2 tsp cornstarch

  • 1/2 tbsp white distilled vinegar

  • 2 tsp hot sauce

    • I used Crystal’s because I was out of Frank’s, you want a vinegar based hot sauce.

  • 1/2 tsp kosher salt

  • 2 tbsp softened butter

Additions:

  • 5-6 slices of bacon, cut into bite-size pieces

  • Whatever you want in them!

Instructions

  1. Cook the bacon if you haven’t already, and cut into bite-size pieces.

  2. Put all the other ingredients into a blender and blend to combine.

  3. Fill six 4oz ball jars with your bacon pieces, equally distributing the bacon between them.

  4. Pour the blended egg mixture into the containers.

  5. Sous-vide at 172 for 1 hour

  6. Carefully remove from sous vide and let cool, then remove from containers. You may need to use a knife to get the mixture to separate from the jar (I’m trying to figure out a recipe that pops right out).
